The cuisine of Mexico has evolved over thousands of years, with flavors and traditions that have been perfected over this time. While we can’t use a pibil, (a hole in the ground lined with hot rocks,) we aim to bring these traditional flavors to Bozeman through the use of modern cooking techniques and a dedicated and passionate staff.  Traditional Mexican cuisine marries rich and well-developed flavors with balanced tartness and acidity.  Slow and low temperature cooked foods allow a chef to impact an incredible depth of flavor, and pairing those foods with fresh, bright, tangy salsas is why Mexican food is 2nd in popularity only to Chinese food in the United States.  Toro aims to shed the myth of heavy, lard-laden foods, and bring the bright, fresh, perfectly balanced cuisine of Mexico to Bozeman.
